  Cooking the Tangine Way
 
Is it cookware? Is it a recipe? Is it a cooking style? Tagine (pronounced tay-jean) is slow-cooked way of preparing foods used in North Africa, notably Morocco, and the name given to recipes for them. It is also the name of the cookware, a shallow “casserole” with a distinctive conical lid.


If travels to North Africa or a love of this region’s flavorful “undercover” cooking have brought you to search out tagine cooking, these tips will give you a start.

Tagine Recipes

  • Moroccan Chicken with Olives has all the ingredients typical in this cooking style—less tender chicken thighs are used; olives, lemon and flavorful herbs and spices add seasoning.
  • Recipes using lamb are very popular.
  • Try roasting a chicken or give a beef pot roast new flavor.

Tagine Cookware

  • The conical shape of the lid acts like an oven when cooking, much like Dutch ovens do. In fact, a Dutch oven is a good substitute.
  • Look for tagines in cookware stores or online sources for serious cooks.
  • The most versatile can be used in the oven or for stovetop cooking and will come with good recipes and ‘how to’ directions.
  • Be a careful shopper. Some tagines are for serving only.
