I am very lucky to get to travel to see my out-of-state grandchildren. I fill the freezer with pancakes that I make ahead for my husband who stays behind. He loves them.

My husband traveled a lot and my kids would get upset when he left. I suggested one time when he was leaving that we would "turn the day around" and have pancakes (with blueberry syrup) for dinner while Dad was gone. They were tickled. Then every time they saw the suitcase, the question would come "are we going to turn the day around?" You bet was my response!

Easy Blueberry Pancakes

My emergency meal is BREAKFAST! I whip up some Bisquick biscuits and gravy with scrambled eggs and sausage or just make pancakes and sausage - a family favorite even for dinner :) good quick and hot!.

“One night I decided we would have spaghetti dinner but I needed all the fixin’s of a good ol’ Italian night meal. When I got home from the grocery store, I realized that I had forgotten the garlic bread! So I pulled out some Bisquick and added a little milk and decided to try putting in some butter and garlic and parmesan cheese.

Those were the best biscuits I have ever made, Now when I make spaghetti I don’t even bother buying the bread, I just use Bisquick!”

My Emergency meal is chicken and dumplings! I use chicken broth,  frozen veggies, chopped onion, spices and two cans of chicken. I thicken the broth, add the dumplings, and in 20 minutes I have a      meal that you'd think I spent all day on!
